Place olive oil in a flat dish. Add rosemary and tuna and sprinkle with sesame seeds and salt and pepper. Coat both sides of the fish well.
Then grill each side for 2 - 21⁄2 minutes. The centre should be raw, like sushi. Allow the tuna to rest for 5-10 minutes and serve.

Combine sugar, paprika, salt and thyme.
Rub mixture over all sides of the salmon.
Set aside for at least 10 minutes.
Grill salmon over medium-high heat 3 to 4 minutes on each side or until desired degree of doneness.

Preheat grill to medium heat. In a small bowl, crush the garlic with the salt. Mix in cayenne pepper and paprika. Then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with garlic paste until evenly coated.
Lightly oil grill grate. Cook shrimp for 2-3 minutes per side or until opaque.
Garnish with lemon wedges and serve.
